Breakfast Burrito

Amount Measure Ingredient -- Preparation Method

2 new potatoes, large -- cut into 1/2 inch cubes
1/2 green pepper -- diced
1/4 cup cherry tomatoes -- cut crosswise
1 Portobello mushroom
1 egg -- beaten
1/2 cup Swiss cheese -- shredded
4 tortillas -- warmed
1/4 cup salsa
1/4 cup onion -- chopped

Spray skillet with Pam and sauté potato on Med to Med.-High until lightly browned. Add onion and continue until done.

Add green pepper and sauté until soft. Add mushrooms, salsa, and tomatoes and stir.

Add egg and "stir fry" into mixture. Add cheese and lower temperature and wait until cheese is melted.

Put 1/4 mixture into tortilla and roll.
